• Vinification & Ageing: Manual harvest with sorting, mostly destemmed grapes, indigenous yeasts, fermentation in small concrete tanks, gentle extraction, maceration for 9 to 21 days. Aged 12 months in concrete vats and sandstone jars. Bottled unfiltered and unfined
